Ingredients
- 1.2kg beef chuck, cut into large chunks
- 4 dried guajillo chillies, stems removed
- 2 dried ancho chillies
- 1 onion, quartered
- 5 garlic cloves
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp apple cider vinegar
- 1L beef stock
- 18 corn tortillas
- 250g mozzarella or Oaxaca cheese, grated
- Coriander and lime, to serve

Toast the dried chillies in a dry pan for 30 seconds per side, then soak in boiling water for 15 minutes.

Blend the softened chillies with onion, garlic, cumin, oregano, vinegar and a cup of stock until smooth.

Brown the beef hard in a heavy pot, then pour over the chilli sauce and remaining stock.

Cover and braise at 160°C for 2.5 hours until the beef shreds with a fork.

Shred the meat and skim the bright red fat from the broth.

Dip each tortilla in the fat, fry with cheese and beef until crisp, and serve with a cup of consommé.
