Ingredients

  • 3 tbsp laksa paste
  • 400ml coconut milk
  • 600ml chicken stock
  • 2 chicken thighs, sliced
  • 200g raw prawns
  • 200g rice noodles
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 2 eggs, soft boiled
  • Bean sprouts, coriander, chilli and lime, to serve

Method

    Fry the laksa paste in a splash of oil for 2 minutes until it smells fragrant.

    Pour in the coconut milk and stock and bring to a gentle simmer.

    Add the chicken and poach for 8 minutes, then add the prawns for 3 more.

    Season with the fish sauce and sugar until it tastes rich and balanced.

    Soak the noodles as the packet says and divide between bowls.

    Ladle over the broth and top with egg, sprouts, coriander, chilli and lime.
