Ingredients

  • 2 salmon fillets (about 180g each)
  • 2 tbsp white miso paste
  • 30g butter, softened
  • 1 tbsp mirin
  • 1 tsp honey
  • 200g cavolo nero or spinach
  • 1 garlic clove, crushed
  • 1 tsp toasted sesame seeds

Method

    Heat the oven grill to high and line a tray with baking paper.

    Mash the miso, butter, mirin and honey into a smooth paste.

    Pat the salmon dry and spread half the miso butter over the top of each fillet.

    Grill for 7-9 minutes until the glaze is bubbling and caramelised at the edges.

    Meanwhile, wilt the greens with the garlic in a hot pan for 3 minutes.

    Plate the greens, sit the salmon on top and scatter with sesame seeds.
