Ingredients

  • 300g cooked sushi rice
  • 1 tbsp rice vinegar
  • 250g sashimi-grade salmon, cubed
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • 2 sheets nori, snipped
  • 3 tbsp Japanese mayo
  • 1 tsp sriracha
  • Soy sauce and sesame seeds, to serve

Method

    Stir the rice vinegar and a pinch of sugar and salt through the warm rice, then let it cool a little.

    Mix the mayo with the sriracha to make a spicy drizzle.

    Only use salmon you trust raw, and keep it cold until the last minute.

    Divide the rice between two bowls and top with salmon, avocado and cucumber.

    Scatter over the nori and sesame seeds.

    Zigzag over the spicy mayo and add soy to taste.
